RARE ITALIAN CHEESE · VICENZA
The family cheese recipe that begins with a terracotta pot and a bottle of wine
Mountain cheese fermented with white wine and pepper, served as a pungent spread on bread or hot polenta.
In the countryside north of Vicenza, in Italy’s Veneto region, mountain cheese and white wine share a terracotta pot. A second fermentation produces Formajo nel Pignato, a creamy, pungent cheese traditionally spread on bread or eaten with hot polenta. Its origins lie in farmhouse kitchens, where imperfect wheels were reserved for the family and seasoned according to household taste. For cheese lovers planning a visit, the contacts below offer a way to enquire about local producers, public tastings and competitions devoted to this unusual Italian speciality.

About
Caltrano recognised Formajo nel Pignato as a De.Co., a municipal designation for local heritage foods, and the recipe is still made for local competitions and food events. There is no single official formula. The amount of wine, pepper, grappa and seasoning changed from cellar to cellar, which is exactly how a household preservation recipe would have survived in a farming community.

TASTING ENQUIRIES & LOCAL CONTACTS ↓
The northern part of Vicenza is dairy country.
Formajo nel Pignato is a traditional cheese preparation from Caltrano, north of Vicenza in Italy’s Veneto region and belonged to the domestic economy: the best cheese was reserved for sale, while wheels with imperfections were used at home.
The name means “cheese in the pot”: a pignato is an earthenware vessel in which crumbled cheese, white wine and seasonings undergo a second fermentation. The finished mixture is creamy, pungent and spreadable, traditionally eaten with bread or hot polenta, cornmeal cooked until thick.
White wine and cellar fermentation offered another preparation for that cheese. Families varied the seasoning, commonly adding pepper and sometimes grappa, the Italian spirit distilled from grape skins and other remains of winemaking. The wine, spices and proportions differed between households, giving each pot its own character. Modern versions use good mountain cheese, with white wines from nearby Breganze among the documented choices. The household practice has also acquired formal recognition: Caltrano began the De.Co. process in 2010, and approval of a production specification and entry in the municipal food register were reported in 2011. Family variations coexist with these rules for the recognised local product.
