ABOUT
In Lonigo, in the province of Vicenza, Cave Rosse offers a 90 minute vineyard and cellar experience with four wines grown in the red clay and limestone of the Colli Berici. The winery takes its name from the former quarries beneath its vineyards, where stone was once extracted for Lonigo's cathedral. Here, in hills formed from an ancient seabed, Chardonnay, Merlot, Cabernet Franc and Rosso provide four very different introductions to Vicenza's wine country. [1][2]

A · The Red Clay Vineyards ↓
Around 60 million years ago, the Colli Berici were part of an ancient marine landscape. Today, limestone, red clay and occasional volcanic formations give the hills south of Vicenza their distinctive character. [3]
At Cave Rosse, established in 2018, the relationship between wine and landscape is particularly visible. The vineyards occupy former limestone quarry land, where pale stones emerge from iron rich red soil. According to the winery, the same local limestone was once used in the construction of Lonigo's cathedral. [2]
The estate cultivates Merlot, Cabernet Franc and Cabernet Sauvignon, using practices including green manure, natural soil aeration and hand harvesting. In the cellar, the reds spend 15 to 18 months in French oak barrels, followed by another year in bottle before release. [1]
There is also a particularly interesting piece of Italian wine history here. In 1973, the Colli Berici became the first Italian DOC to include Cabernet Franc, a grape with origins in France that has a long history in these Vicenza hills. [4]
B · Four Wines to Discover ↓
The experience begins with an introduction to the Colli Berici, followed by a visit to the vineyards and cellar. The tasting includes four wines, presented by people involved in their production. [1]
Chardonnay
The winery's white wine, with freshness, structure and a rounded finish.
Merlot
A red with ripe plum and cherry aromas, gentle spice and a generous texture. Cave Rosse's Merlot is fermented in unlined concrete before ageing in French oak barrels. [2]
Cabernet Franc
Perhaps the most interesting glass for anyone curious about Vicenza's red wines. Cave Rosse describes aromas of fresh strawberries, cut grass and wet gravel, with lively acidity and a persistent finish. [5]
Rosso
The winery's red blend, bringing together different aspects of its winemaking approach.
The tasting offers an opportunity to compare four expressions of the same landscape, from a white Chardonnay to the Cabernet Franc particularly associated with the Colli Berici.
